Preheat your oven to 220C/Gas mark 7. From each sheet of puff pastry cut a 22cm-diameter circle and place onto your baking trays. Place into the oven to cook, and then remove after 10 minutes. Reduce the oven temperature to 180C/Gas mark 4
Evenly over the puff pastry discs, spread the caramelised onions leaving a 5mm gap around the edge
Using a fork, flake the turkey meat evenly over the top of the onions. Then crumble the stilton over the turkey
Place the tarts into the oven to bake for 10-12 minutes or until the cheese has melted. Remove and scatter each tart with rocket leaves. To serve, drizzle liberally with rapeseed oil.
