Rich Roasted Tomato & Turkey Ragu with Pappadelle

Great Chef Recipe. This recipe for Tomato and Turkey Ragu is ideal for chefs and can be easily scaled up to feed many.

Sauté the onions, garlic, paprika, sunblush tomatoes and turkey mince

Add the tomatoes and simmer for 1 hour until cooked down & reduced

Check the seasoning

Reheat the pappadelle and place into a bowl

Add the turkey ragu and top with some shaved parmesan and finish with the pesto

  • 1kg Chopped Tomatoes
  • 200g Chopped sunblush Tomatoes
  • 20g Smoked Paprika
  • 500g Fresh Cooked Pappadelle
  • 50g Pesto
  • Sea Salt
  • Milled Black Pepper
